Yesterday I made myself a vegetable soup with chicken broth. Sounds simple right? Wrong! I put the broth on the stove to simmer and then added my veggies to soften, I also added some salt and pepper and waited. I waited for the vegetables to get soft, I really don’t like crunchy veggies in my soup. And I waited. Well I ate the soup, but it didn’t taste that great. Knowing that if at first you don’t succeed, try again a different way, I tackled the vegetable soup again this afternoon for lunchtime. This time I was smarter about the veggies. I sauteed them first in butter and olive oil with just a bit of salt and pepper. Then when they were starting to soften, I added just a touch of chicken stock to allow them to simmer. When that had reduced, I added a small can of chicken and then the rest of my chicken stock to heat and become the soup.
I have to confess that today’s soup was at least 1000% better than yesterday’s soup. I am a firm believer that if something doesn’t work out the first time just try it again and you will get the bugs out!
I’m already planning ahead to the next bowl, where I will add garlic and onion for a more developed flavor profile!
